1 28 oz can of diced, crushed or pureed tomatoes
1 medium onion, diced
3 cloves garlic, minced
1 tablespoon sugar
1 pinch of salt
1 pinch of black pepper
1 teaspoon fresh or dried thyme
1 cup water
1 teaspoon olive oil
1 slice of bread of your choice
1. In a medium pot, heat olive oil on medium low heat. Add chopped onion and garlic and saute until slightly translucent, 2-3 minutes.
2. Add canned tomatoes followed by remaining ingredients and stir.
3. Cover, turn heat to low and simmer for 10 minutes.
4. Toast bread.
5. Once soup is heated through and fragrant, it’s ready to serve with toasted bread.
