Hearty Brown Rice and Bean Burrito

Ingredients

1 tablespoon canola oil
1 cup diced onion
3 garlic cloves, minced
½ teaspoon oregano
1 teaspoon smoked paprika
1 small tomato, diced
1 cup cooked black beans
1 cup cooked brown rice
1 pinch salt
2 flour tortillas
Salsa of your choice

Directions

1. In a medium skillet over medium heat, warm up the canola oil. Once hot, add onion and garlic. Stir occasionally until translucent, 3 minutes.
2. Add tomato, oregano and paprika to the pan. Cook and stir for another minute. 
3. Add rice, beans and salt to the pan and mix thoroughly. Cook until heated through, about 5 minutes. Turn off heat.
4. Warm tortillas in the microwave. Place tortillas on a plate and cover with a damp paper towel. Heat in the microwave for 30 seconds.
5. Divide mixture between the tortillas. Roll into a burrito. Serve with your favorite salsa and hot sauce.
