California Veggie Sandwich with Hummus Spread

1 ripe avocado, sliced

Baby spinach

Alfalfa sprouts

1 small cucumber, sliced

1 small tomato, sliced

Storebought hummus, your choice

2 slices bread of your choice


1. Toast the bread. 

2. Assemble the sandwich. Slather a thick layer of hummus on each slice of bread. Top with avocado, baby spinach, alfalfa sprouts, cucumber and tomato. 

3. Sandwich with the second slice of bread. Cut in half if desired.
