2 tablespoons canola oil
1 cup cooked rice (white or brown)
1 small yellow onion, thinly sliced
1 large carrot, diced
3/4 cup fresh, canned or frozen green peas
3 cloves of garlic, minced
1 teaspoon fresh grated ginger
1/4 cup soy sauce
2 green onions, chopped
1. Heat up oil in a wok or large frying pan on medium heat. Once the pan is hot, add onions, garlic and carrots. Cook until soft, about 3-4 minutes. Add ginger and stir frequently, making sure not to burn the ingredients.
2. Add the rice, followed by the peas to the pan. Season with soy sauce. Combine well with vegetable mixture.
3. Turn off heat and garnish with green onions.
